Eatables – Berry Banana Pancakes

Breakfast is hands down the best meal of the day! If you don’t think so, than you are not a person I want to know in this world. Ok, that may be going a little too far, I still like you, but I will never understand you.

One of my favorite things to make are pancakes. Their fluffy goodness heaping with syrup just makes my mouth water. But let’s face it, pancakes have a ton of ingredients and who wants to deal with that in the morning? So I’ve got a great pancake recipe for you that has very few ingredients and is super easy to make. Not to mention, you could eat a ton of these and they wouldn’t even come close to the calorie count of normal run o’ the mill pancakes. It’s breakfast time!

 

 

INGREDIENTS:
1 banana
2 eggs
Berries of your choice. I have strawberries and blackberries for topping.
1 can full fat coconut milk chilled

 

DIRECTIONS:
In a medium mixing bowl, mash the banana and eggs together until they make a creamy batter. Spoon onto a pan or griddle on low heat. When pancakes have been on the griddle for about 5 min and the under side is brown flip over and cook the other side. These pancakes take longer to make than regular pancakes so be sure not to flip too early. Your patience is worth it.

Open the can of coconut milk and whip the thicker bit using an electric mixer until it is light and creamy like whip cream. Add in the liquid left in the can as needed.

Place pancakes on a serving dish and top with coconut milk, whip cream, and berries. Enjoy!
