I’m always looking to find really tasty things to make for lunch and dinner that are fast and easy to make. Sometimes those run o’ the mill healthy dishes can get a little old. So I thought I’d try one of my favorite dishes and make it a little healthier and easier to make. Phad Thai is one of those things that I could just eat for hours on end and still be majorly happy… and well, majorly fat. So I took the general delicious flavors and switched them up with their healthy counterparts. And dare I say it, I actually like this version a million times better!
Oh and in case you are wondering what a zoodle is… just think zucchini noodle.
3 small zucchini
1/2 cup almond butter
3 tbs tamari
1 tbs honey
1 tbs lime juice
1 tbs + 1/3 cups water
Salt and pepper
1/4 cup slivered almonds
3/4 cup chopped green onions
The first thing you want to do is spiralize your Zucchini (and yes leave the skin on). I spiralize it straight onto a skillet and then set aside (less to clean this way).
Then combine almond butter, tamari, honey, lime juice, water, salt and pepper into a small mixing bowl. Stir together until the mixture is smooth and creamy.
Sauté your zucchini on medium heat in a skillet. Pour in your almond butter mixture and water. Mix together. Continue sautéing until the Zucchini noodles become soft.
Put the zoodle mixture into a serving dish and top with slivered almonds and green onions. Serve and enjoy!
